The Burdekin First Giru isn’t just another rum – It’s a piece of Australian rum history.
Created from the very first local crop of sugarcane harvested in the Giru district in North Queensland during Spring 2022, this spirit celebrates a landmark collaboration between Burdekin Rum and local cane farmer John Pierotti. Just 500 numbered bottles were produced. Once they’re gone, they’re gone forever.
This is a true paddock-to-bottle release.
The cane was harvested whole-stick, crushed immediately on site, fermented with Burdekin’s proprietary yeast blend and double distilled from fresh sugarcane juice rather than molasses.
No added sugar. No added flavours. No added colours. Just pure Giru sugarcane character.
🍃 WHAT MAKES IT SO SPECIAL?
Most rum starts with molasses, this starts with freshly pressed sugarcane juice.
Inspired by the famous agricoles of the French Caribbean, Burdekin First Giru captures the fresh, vibrant flavour of Queensland cane in a way that very few Australian spirits ever have.
Every sip is a snapshot of North Queensland.
The soil. The cane. The water. The climate.
This isn’t just a spirit.
It’s Giru in a glass.
Made entirely from the local sugarcane from the ‘Giru’ district – cut whole (instead of the usual billets) and then juiced straight away on-site at the distillery. The fresh juice then immediately inoculated with Burdekin’s proprietary yeast mix. Whilst Burdekin openly talks about using a proprietary yeast blend and temperature-controlled fermentation, they don’t publicly disclose the fermentation length. The emphasis here appears to be on producing a clean, elegant cane spirit that showcases fresh Giru sugarcane rather than pursuing the long, high-ester fermentation associated with some Jamaican styles. Double distilled in Burdekin’s Hybrid pot/column still, it is then rested in inert stainless steel and then cut down to 45% abv for bottling.
A quick note on the water used – interestingly, Burdekin Rum began life as a local spring water bottling operation before expanding into spirits distilling. From the cane itself, right to the local spring water, this is the taste – the terroir! – of Giru!

Our Tasting Notes:
Nose: So green and herbaceous and sweet. So fresh and full of floral notes. I just love the nose of a good Agricole style and this has it in spades. I could sit with this under my nose for hours in a happy haze!
Palate: Sweet and luxuriously oily on the palate with some white pepper there. Fresh, sweet banana, paw paw, lychee and other tropical fruit notes. But the sweetness soon turns dry and clean – (the column component of their hybrid still at work here) which takes us into the…
Finish: Lovely and long with a lingering fruity warmth. Theres a hint of salinity – like olive brine that comes through in the finish as it starts to fade.
While due to Aussie regulations, we can’t call this rum in Australia (as it hasn’t been aged in oak for two years) – but once it loads into a boat going anywhere else in the world, it certainly can be! Australians have been a bit slower on the uptake of un-aged Agricole-style, but the rest of the word has been drinking this style of rum for years. And this is an absolute cracker. Absolutely, moorishly fantastic on its own – but shines in a daiquiri or any other cocktail calling for ‘white rum’ or Agricole.
