‘White Rum’ is made by filtering dark rum through activated Charcoal. In the case of the Hotel Lobby ‘Pearl White’ – this charcoal is made using a prolific Philippines resource – coconut husk! The  Hotel Lobby White Pearl is 3yo molasses-based, column distilled rum matured in ex-bourbon casks, and then charcoal filtered through 6 feet of charcoal coconut shells to remove any colours and smooth out the flavour profile. Yes. It’s Ube Cream Liqueur – and if you miss it this time, you’ll be hearing about it from every other member who didn’t.

Ube Cream Liqueur is possibly the most striking and ‘left field’ rum product I’ve come across so far.  Based on rum made from Nobel Sugar Cane juice (so an ‘Agricole style’ base) – this is blended with Ube (a type of purple sweet potato), coconut (from Mindanao) plus some cream (and almost certainly some sugar in there as well – it’s a liqueur after all!). The resulting bright purple liqueur is an absolutely delicious concoction by itself over ice, or mixed in a cocktail (such as an Ube Pina Colada)!

Our Tasting Notes:

💜 HOTEL LOBBY RUM

Nose: Tropical, bright and fresh are three words that instantly come to mind nosing this rum. Lots of sweet tropical fruit notes -fresh banana, lychee, guava and coconut to name a few I get. I’m sure more will spring to mind next time. All this with a big serve of vanillary Crème Brulé thrown in.

Palate: Sweet and just slightly warming on the palate with more lovely coconut notes, more vanilla plus a kaleidoscope of ‘jube-y’ flavours that pop and swirl.

Finish: Not real change in the flavour dynamic in the finish. A slight custard-y note on the alongside the all the notes aforementioned in the palate. The coconut really ‘pops’ again for a moment at the tail end of the finish too!

Whilst this isn’t the most complex or sophisticated rum I’ve tasted – it really is a bloody pleasant sipper. It’s not challenging, or funky or ‘left field’, but it’s sweet and fruity (without being overly sweet), light and tasty and certainly has some ‘X-factor’ there that does make it compelling on its own. But I feel its real strength is going to be a white rum for cocktails. With so much tropical fruit in its flavour profile – it’s going to fit right into your next cocktail!

💜 UBE CREAM LIQUEUR

Rather hard to describe this one. The first impression is the colour! The bottle isn’t lying – this stuff looks like purple paint! It’s the most vibrantly coloured alcoholic product I’ve ever laid eyes on! The flavour is very vanillery – but there’s just something there  I can’t put my finger on (Ube I guess! J). Theres nutty – pistachio I think – notes in there as well. As well as white chocolate and some floral notes  It’s sweet and creamy with an almost identical mouthfeel and sweetness as Kahlúa – only with that ube-vanilla rather than Kahlua’s coffee notes.

This is a totally ‘left field’ product and well worth trying! It’s definitely a unique flavour. Pull this out after dinner and the colour alone will have  your dinner guests forming a queue to try it. It was sold out at Brisbane and Sydney Rumolution this year – and for good reason. It’s a spectacular drink on it’s own, and who doesn’t want to play around making some purple cocktails! Be warned though – adding to much acidic ingredients (eg lime or lemon) to an ube-based cocktail can cause the cream to curdle.

After a solid field test on the weekend, I can highly recommend whipping up a few ‘Ube Coladas’ and/or some Purple Russians! Oh. So. Good!

Ube Colada

  • 30 ml Ube Cream Liqueur
  • 45 ml dark rum
  • 30 ml coconut milk
  • 60 ml pineapple juice
  • 20 ml sugar syrup

Shake, strain and build; garnish with pineapple.

Purple Russian uses:

  • 60 ml Ube Cream Liqueur
  • 20 ml vodka
  • 20 ml coffee liqueur
  • 15 ml fresh milk

Garnish glass with a chocolate-sauce rim.

Ube Cream Liqueur Distillation & Rum Profile

Palate & Finish: Velvety mouth feel, subtly sweet that is ‘moorish’ in flavour leaving you wanting more, giving way to a warm bite of sugar cane spirit

Distillation Process: Noble Sugar Cane from the Island of Negros is fractured and the juice is distilled into cane spirit. The rum distillate is then blended with Ube from the Island of Bohol (a naturally purple root vegetable, that is a close cousin to New Zealand’s kumara or sweet potato), coconuts from Mindanao and cream.
