Casa Barú is a Panamanian pure single rum producer built on copper pot distillation, volcanic soil cane, and a philosophy of provenance, precision, and expressive cask maturation.
Casa Barú’s XO Cognac Finish begins with long-fermented sugarcane syrup distilled twice in copper pot stills, creating a weighty, ester-rich pure single rum before ageing in ex bourbon barrels and finishing in French Cognac casks.
The base spirit is shaped by slow, expressive fermentation that builds tropical fruit, spice, and floral compounds, which are then concentrated through double distillation for texture and depth. The rum spends its primary maturation in American oak ex bourbon casks, developing vanilla, honeyed oak, and structural sweetness, before being transferred into French Oak Cognac barrels from the Charente region.
This finishing stage layers in dried fruit, old-oak polish, and subtle rancio notes without overwhelming the pot still character. The result is a refined, aromatic XO that marries Panamanian richness with the elegance of seasoned Cognac wood.
Casa Barú operates in the highlands of Chiriquí, Panama, where volcanic soil, mountain rains, and cooler temperatures create ideal conditions for slow, character‑building maturation. The distillery sources artisanal sugarcane syrup exclusively from small local farmers, a choice that gives their spirit a brighter, fruit‑forward, more terroir‑driven profile than molasses‑based rums. This focus on raw‑material integrity is one of the brand’s core pillars.
Production at Casa Barú centres on double distillation in copper pot stills, a technique more commonly associated with single malt whisky than with mainstream rum. This method preserves the full weight of their long, wild‑yeast fermentations (typically 2–3 days), resulting in a spirit with depth, texture, and naturally complex esters. Casa Bar transparency profile lists them as a ‘pure single rum producer’, highlighting their commitment to authenticity and small‑scale craft rather than industrial output.
Our Tasting Notes
Nose: Rich waves of dried dates, apricot leather, and prune compote roll out first, wrapped in warm French oak, sandalwood, and a touch of timber polish.
Palate: Silky and layered, opening with dried stone fruit, vanilla bean, and honeyed oak before deepening into tobacco leaf, black tea, and soft and nutty rancio from the Cognac cask. The pot still weight carries everything with a slow, confident glide.
Finish: Long, elegant, and gently tannic. Notes of sandalwood, dried apricot, toasted oak, and a final flicker of citrus peel linger, leaving a dry, sophisticated echo of French oak.

At Casa Baru’ – we’re passionate about making the best pot still rum we can in Panama. Volcan Baru’ sits on the border of Costa Rica in the lush rainforests of Panama, at the perfect climate and altitude for maturation. The now dormant volcano has left a microclimate of the perfect rich black soil for sugarcane and coffee growing with pristine water from the daily rain storms that wash through. In a region of waterfalls and rivers and rainforests – we found the perfect location to setup the distillery in 2017 in the small town of Boquete. Our philosophy was to focus on the best of the ingredients found within miles of the distillery, working with local farmers to make exceptional rums.
Our focus is to make a pure single rum – no sugar, no caramel and no issue for those who like to drink whichever rums they like. There is a rum for everyone – it’s just what we’re passionate about. The cognac barrels bring a sweetness and depth of colour that makes a beautiful sipping rum.
