To continue our theme of โAustralian Rum Awards Winnersโ, we have one of only two rums to be awarded a Double Gold medal at the Australian Rum Awards. Weโre really quite stoked to be able to offer the very last bottles of this Double Gold Award winning Brix Select Cask Series Tawny Finish to the Tribe.
For those unaware โ Brix is the unit of measurement of dissolved solids in a liquid. It is mostly used to measure sugar in wines and spirits.ย A rather fitting name for a rum distillery producing a wide range of rums โ from un-aged spirit, to spiced and pure rums. The Tawny Finish – all of their select casks series for that matter – is a pure, single origin rum, with absolutely no sugar or colour added.

The Brix Tawny Finish is a molasses-based rum. Brix use 2 yeasts in individual fermentations โ Champagne yeast which ferments over 5 days and a โCaribbean Rumโ yeast that does its job in around 4 days. The resulting โbeerโ is then distilled in an 1800L pot-column hybrid (2 plate column) still. Matured initially for over 3 years in 225L French Oak Hunter Valley Shiraz casks, then finished for around 3 months in American Oak ex-Tawny casks. Bottled at 48.1% in a limited batch of 1136 bottles.
Our Tasting Notes
Nose: Tart pineapple , rusty nails, fruit pudding, and caramel milk shake.
Palate: Wow thereโs a lot to unpack here. Lovely mouthfeel strait up โ nice and oily. Masses of stewed fruit notes, milk bottle lollies, caramel and liquorice as well. A pleasant new leather note sits at the back there too.
Finish: Lovely and long. Very pleasant warmth with more spiced fruit and pastry notes (Arnotts spicey fruit roll?) with a custardy qualityย as well.
This is a lovely, โtraditionalโ Aussie rum on steroids. Big molasses-driven flavours and that tawny finish adds a lovely spiced fruit and vanilla punch. Fantastic rum, truly deserving itโs double gold! Strait up itโs nice โ it sits extremely well in a strong dark and stormy as well (guilty!)
From Brix Distilling
We have worked closely with our winemaker friends at Brokenwood & Thomas Wines to source the best quality casks available for maturing our Tawny Finish Release.
This handcrafted Rum has been aged in 225LT French Oak Casks, previously housing premium Hunter Valley Shiraz. This has led to a rich oak & dark fruit flavour profile, with a base of vanilla & baking spice developing over three years of maturation.
The Rum was then decanted & finished for a further three months in 500LT American Oak Tawny puncheons, offering up intense sweetness, further oak & notes of raisin, maple & candied fruits.

Brix was born out of a love for rum. Over time this love turned into passion for discovery, experimentation, appreciation & adventure.ย We discovered that rum in Australia was not being reflected in the right light.
So we have set out for change.

In 2017, weย set out to find a site whereย weย could establish an urban distillery that showcased the best that Australia has to offer. We found our home on Bourke Street, Surry Hills & we love it.
We challenged ourselves to source the best quality Australian molasses, fresh organic sugar cane, an Australian made copper still, the best quality native spicesย & Australian wine barrels from some of the best wine making regions of the world.
Our goal: To combine these amazing ingredients to create a unique Aussie rum. A rum that can be enjoyed in the bars of Australia and in our own backyards. We now produce a variety of unique rums and are in the process of barrel ageing many more styles and varieties to be released in the years to come.
