This is a rum that feels instantly welcoming in the glass: warm, soft, and effortlessly enjoyable, the kind of pour that settles you into your chair before you even realise it. With only a whisper of added sweetness, it keeps its edges rounded without ever drifting into syrupy territory, letting the natural Dominican richness glide across the palate. It’s the sort of bottle that disappears faster than planned, not because it’s simple, but because it’s so beautifully balanced you don’t have to think about it to enjoy it.

The Rum Bullion Dominican Republic 11yo begins its life in the Dominican Republic, where it is distilled from molasses in the classic Spanish Caribbean tradition. While Jean Boyer does not publicly name the distillery, it’s likely to be either Alcoholes Finos Dominicanos or Barceló (personally I’m leaning towards Barceló). Both are known for creating clean, fruit forward distillates that match the profile of this release.

The rum is matured in the tropics before being selected as part of the Rum Bullion Millésimé program, a series dedicated to showcasing the authenticity and regional character of the world’s rum producing nations. Each batch is tiny – fewer than five casks – and bottled without colouring or chill filtration, preserving the spirit’s natural texture and identity. There is a small amount of sugar added – and this (to their credit – Bravo!) is made completely transparent – the description explicitly states that although the rums are molasses based, they are “très peu sucrés” – very little sugared. For reference they rate 2/10 on the sucrosité score – and that translates to roughly 5g/l of sugar – a very tiny amount. For reference – even some rums with zero sugar added can give small ( 5g/l) due to natural sugars in the cask.

Once the rum is shipped to France, Jean Boyer applies the same philosophy that made him one of the country’s most respected independent bottlers: small lot transparency, vintage specific bottlings, and minimal intervention. Since 1987, Boyer has built a reputation for sourcing distinctive casks from across the whisky and rum world, bottling them in Landes and Provence with a focus on purity and provenance. The result is a refined, regionally faithful Dominican rum that reflects both its Caribbean birthplace and the French bottler’s commitment to craftsmanship.

Jean Boyer himself is a bit of a cult figure in French independent bottling – a house known for restraint, transparency, and a deep respect for the spirit in the cask. Since the late ’80s, Boyer has built a reputation for bottlings that feel honest and unforced, always small batch, always minimally handled, and always focused on letting the raw material speak. His Rum Bullion line takes that philosophy into the rum world: tiny lots, no colouring, no chill filtration, and a clear intention to showcase regional character without embellishment. It’s rum presented the French way – thoughtful, precise, and quietly elegant.

That ethos is exactly what makes this 11 year old Dominican release such a perfect Rum Tribe pick. It’s relaxed enough for a casual mid week pour, refined enough to impress your whisky drinking mates, and smooth enough that even newcomers will feel like they’ve stumbled onto something special. There’s a subtle luxury to it – not loud, not showy, just deeply satisfying in that “oh, that’s lovely” way that keeps you reaching for another glass. And with Rum Bullion batches being as tiny as they are, this is one of those bottles that won’t be around long. It’s a comfort pour, a crowd pleaser, and a cabinet keeper all at once.

Our Tasting Notes

Nose: Opens gently with butterscotch, vanilla, and sweet ripe tropical fruits. Vanilla cream, caramel, and light coconut, giving the nose a warm, dessert like character.

Palate: Smooth, rounded, and easy-going. Expect vanilla, caramel, and tropical fruit to lead, supported by a creamy sweetness reminiscent of vanilla custard or sweet cream. Soft, lightly sweet, and flavoured with butterscotch, with some chocolate, honey, and gentle fruitiness. The overall impression is flavourful but not heavy – a relaxed, silky rum with mild oak influence.

Finish: Medium finish, clean, and lightly sweet. Fades out leaving behind traces of vanilla, caramel, and soft fruit, with no bitterness or harshness. It’s a gentle, easy finish that matches the rum’s overall smooth character.
