The Red Mill ‘The Sherry Triangle’ was made using fermented premium molasses and hybrid distillation before being matured in a series of barrels sourced from the famed ‘Sherry Triangle’ in Spain. Distilled in 2022 it was then aged in casks that previously contained Moscatel, Pedro Ximinez and Oloroso Sherries. Blended from these three casks and presented at a strength of 44.7%abv.
The Sherry Triangle is a unique geographical region in Andalusia, southwestern Spain, renowned globally as the exclusive, legally protected production zone for Sherry wine. Its vertices are formed by three historic Andalusian towns: Jerez de la Frontera, Sanlúcar de Barrameda, and El Puerto de Santa María.

Our Tasting Notes
Nose: Deep rich fruit with a nutty (peanut brickle?) overtone and oaky notes underlying.
Palate: Sweet and nutty on the palate with big pastry flavours also. Some big green(granny smith) apple notes come bursting through as well as the palate turns to the finish.
Finish: Dries out in the finish somewhat which balances the sweetness of the initial palate nicely. As it fades there’s a noticeable briney-ness too (an almost, but not quite, dirty martini olive-y-ness).
This is an intriguing rum with lovely balance between sweet and salty. The delicious nuttiness really adds a lot of depth to the big sherry notes. Interestingly there is little to none of the pepperiness usually associated with French oak casks.

Rich nose of Pedro Ximenez, smoke, and bakers spices, with Anzac cookies, and ripe mangoes.
Dense, bright amber colour.
Sweet entry, Pedro forward with a salty, Fino twist on the finish. New French vanillin oak and smokey, rancio notes.
Candied orange, mango, wholemeal flour and salted caramel. Medium dry finish and powerful finish.
