Now Killik and the Rum Tribe are no strangers, in fact weโve been collaborating with the boys and supporting each other pretty much since both businesses kicked off in 2020. One of the things that really makes Killik Handmade Rum stand out (and trust me, they are really starting to stand out on the international stage) is the quality of their raw spirit. Made with pure Aussie molasses and fermented in a 2-step fermentation (incorporating dunder and muck in the ferment for all those lovely wild yeasts!) that can last over 6 WEEKS! This monthโs โMembers Extraโ is just that โ raw Killik juice – the Killik Silver. And seeing itโs Halloween – with an exclusive bonus โ a handmade โZombieโ tiki cup!
Now every rum drinker has a โwhite rumโ in the collection for cocktails โ and the Killik Silver is an absolute powerhouse in that very department. Now the term โwhite rumโ refers to an aged rum, passed through activated charcoal to strip all the colour imparted by the aging casks. Inevitably, whilst removing colour from the spirit, the charcoal also strips many of the flavour compounds that make rum… wellโฆ rum!
The Killik Silver is different in that it hasnโt seen a filter. It hasnโt needed to because itโs never seen a barrel, either. As mentioned, itโs the product of a looong (~6 week) 2-step fermentation utilising dunder and muck from previous distillations. This is cane spirit (we canโt call it rum because it hasnโt been aged in wood for 2 years!) strait out of Killikโs hybrid still – just cut to 42% abv with pure (reverse osmosis) water and rested for a few weeks in an inert container before bottling. The โlittle brotherโ to the Killik Silver OP. SIMPLES!
And it is the PERFECT substitute for a boring โwhite rumโ when itโs cocktail hour. If you are yet to experience the Killik Silver in cocktails you can forget everything you know about mixing white rum. This is a whole different beast, it is extremely fruity and adds a lot of character to drinks not just alcohol content like some others.
Oh โ and if youโre wondering about the blue colour of the bottle โ thatโs the recycled glass giving the otherise crystal clear Killik Silver a blue tinge that shows up strikingly in our photos this month.
Here’s some classic โZombieโ recipe to get you started:
The Zombie
55ml Dead Reckoning Venezuela 11.5yo rum
20 ml Killik Silver
15 ml Falernum liqueur
30 ml Pineapple juice
20 ml Lime juice (freshly squeezed)
10 ml Pink grapefruit juice (freshly squeezed)
5 ml Grenadine/pomegranate syrup
4 dash Absinth
Pinch of salt
Prepare:
1. Select and pre-chill your Killik Zombie Tiki Cup
2. Prepare garnish of mint sprigs bouquet.
How to make:
3. DRY BLEND (without ice) first 10 ingredients (all but Xanthan gum) on a slow setting and then gradually add Xanthan while continuing to blend.
4. dd 7oz scoop of crushed ice and BLEND some more.
5. POUR into chilled glass.
Garnish:
6. Garnish with mint sprigs bouquet.
7. Serve with a straw.
The PainKiller (or PainKillik in this case)
-120ML Pineapple juice
-30ml of good coconut cream (we prefer Thai brands for sweetness)
-30ml orange juice
-60ml of KILLIK silver
SHAKE with ICE!
Strain into glass, garnish with grated nutmeg and dust with cinnamon
Our Tasting Notes
Nose: Wow โ just so distinctive on the nose with those bubble-gummy, funky fruit and over-ripe hogo notes with a generous *boof* of sour milk to boot!
Palate: I donโt often use โcheeseโ in my tasing note descriptors but thatโs the first thing I notice on the palate a delicious, almost umami cheesy character. But that doesnโt last more than a few seconds before a cascade of sweet over-ripe tropical fruits โbanana, lychees, paw paw, mango with a note of strawberry and cream lollies that certainly jolts the memory circuits!
Finish: After such a sweet palate itโs a bit bait-and-switch on the finish as thereโs a definite salty-briny kick added to the fruitiness as the finish plays out. A bit like salty-plumbs.
Look โ itโs an interesting sip straight up and I personally, do enjoy sipping a dram of this from time to time to chase those distinctive hogo-ey notes that Killik do just sooo well. But this really shines as a โworkhorseโ for rum cocktails. Swap out those insipid โwhite rumsโ with some serious fruity bubble gum notes that will fill really make your rum-based cocktails POP!

Distillery & Production
Killik Silver is distilled at the foothills of the Dandenong Rangers, and since the first time we put this rum into the Tribe we have refined out production process, making a much more flavourful product The use of “older and more complex Muck and Dunder” in the fermentation is a nod to traditional Jamaican rum-making techniques where we took out inspiration from the beginning. We have begun to add a touch of retort in Killik Silver enhancing the spirit’s distinctive flavor.
Flavor Profile & “Hogo”
The tasting notes are a central part of Killik Silver’s identity. On the nose, you’ll find aromas of stone fruit, pear, and bubblegum, while the palate offers a distinct note of strawberries and cream. These intense, funky flavors, known as “Hogo,” are what make this spirit stand out. The description explicitly compares these characteristics to classic high-ester Jamaican rums like Hampton Estate and Worthy Park, and names Hampton Rum Fire as the direct inspiration.
Cocktail Versatility
The spirit is designed to be a workhorse in cocktails. The producer notes that Killik Silver can transform even simple drinks like a Daiquiri, Mai Tai, or even a simple Cuba Libre adding a flavour and complex dimension to the experience.
